I did it!! I REALLY DID IT! I baked my very first, from scratch, Lemon Meringue Pie! Now don’t get me wrong, I bake plenty of cakes and cookies and cobblers but a REAL pie with meringue? This was a triumph! My sweet husband has a Birthday tomorrow and his request was for lemon pie.
I used a recipe from the 70’s in a Church cookbook from Tennessee that my sister in law gave me many years ago.
I will tell you that it is absolutely 100% true that meringue is quite sensitive and if there is one iota of fat or yolk in the egg whites, the meringue will fail. ( this portion of the pie did take a second effort) nonetheless I am about to share the photographic evidence of my efforts here for all to see and I am excited to present this labor of love to my husband tomorrow on his special day…
